BLACK BEAN SALAD

This recipe might seem a little underwhelming, involving only the mixing together of ingredients in a bowl and then eating them, but it turned out so much better than I was expecting, so I feel I have to share it with you! Since making it for the first time a few months ago I have probably eaten this salad once a week, it’s super convenient to make and then bring with me to work, university, and everywhere else. The coriander and lime juice give it an excellent flavour, and the black beans are a great way to fill you up without feeling too heavy!


Ingredients (serves 4)

  • 2 400g tinned black beans
  • 1 400g tinned sweet corn
  • 10 cherry tomatoes, halved
  • 1 red onion, diced
  •  1 avocado, sliced
  • 1 red capsicum, diced
  • 8 slices of jalapeño pepper, sliced
  • ½ head lettuce, chopped
  • ½ juice of fresh lime
  • ½ bunch fresh coriander, chopped
  • 1 tsp smoked paprika
  • salt and black pepper, to taste

Instructions

  • Rinse black beans and sweet corn together in a sieve, place into a large bowl
  • Slice cherry tomato into halves, dice capsicum and red onion, slice avocado and add to the bowl with the black beans and corn
  • Slice jalapeños, chop coriander, and add to the salad
  • Sprinkle with smoked paprika, salt, pepper, and juiced lime
  • Serve with brown rice, broccoli and lettuce, in a wrap, or accompanying whatever else you like

  1. Sometimes the simplest recipes are the best tasting ones! Foe example, a baked sweet potato stuffed with Brussel sprouts, onions, black beans, and tomato makes an incredible meal, as does oatmeal with cinnamon, blueberries, banana, and a little maple syrup!
